Siem Reap Sour Fish Soup

This soup is super easy and quick to make, making it the perfect mid week dinner the whole family will love. .

Siem Reap sour Fish Soup

Ingredients:
2 litres fish or chicken stock
6 to slices of galangal
600g firm fish fillets cut into small cubes
2 tbsp palm sugar
4 tbsp fish sauce
salt to taste
4 tbsp tamarind paste or juice of two limes
3 tbsp roasted and crushed peanuts (optional)
300g water spinach or English spinach cut into 3cm lengths
1 handful of Thai basil
3 red chillies (or less if you are not a heat fanatic)

Method:
Bring the stock to a boil, add sliced galangal and fish and cook for two minutes. Add palm sugar, fish sauce, salt, tamarind paste or lime, and peanuts and simmer for a few minutes more. Add the water spinach, basil and chilies, stir well and serve immediately.

This is usually served with a bowl of steamed rice as an accompaniment.

The idea is to alternate spoonfuls of the soup with spoonfuls of the rice dipped into the soup.
